とろりとした舌ざわりが絶品！石鯛のヅケとホタテの海鮮丼

石鯛が安く手に入った。嫁は肉より魚派。最近最近安く良い魚が買えなかったので刺身と海鮮丼で頂くとしよう。

買ってきた石鯛は35cmくらいのサイズで298円。朝佐渡沖で執れた新鮮な魚。

良くも悪くも新鮮過ぎる魚は身に歯ごたえがあり過ぎるのと、旨味が出ていないためあまり美味しくない。その日取れた魚は早めに捌いておいて、塩を軽く振ってキッチンペーパーで約3時間(1時間くらいでも可)ほど冷蔵庫で寝かせる。

水分と臭みが程よく抜けて、少し飴色の身質になる。食べごろ。

少し盛りすぎたが、おいしそう。

一部の切り身は漬けタレに30分程つけておいて、残り物のホタテと一緒に海鮮丼に。漬けたタレは酒大匙2、みりん大匙2、醤油大匙1を煮立ててアルコールを飛ばしてから冷ましたもの。少し甘みの強い旨いタレ。薬味として細切りした大葉といりごまを振った。

刺身は塩ふりのおかげで程よく熟成状態。口当たりは柔らかく滑らかで、旨味が強い。鯛特有の上品な後味。日本酒にとても合う。

海鮮丼は強めに酢を効かせた酢飯と一緒に頬張ると至福。より水分が抜けトロっとした口当たり、極上のタレと絡んでインパクトがたまらない。酢飯と大葉が良いサポートとなってさっぱりした後味になる。一口で起承転結させてくれるダイナミックさ。素晴らしいものを作ってしまった。
