和風パスタは旨い。正直醤油と大葉か海苔が入っていればどんな和風パスタでも旨い。
今回は、極力シンプルなレシピをご紹介したく、キッチンによくある材料で、手軽に作れる「きのこの和風パスタ」のレシピをご紹介します。
バターを使用せず、オリーブオイルとニンニクでパンチを加える一工夫をしています。
「がっつりニンニクが効いた和風パスタを食べたい！」という時に、ぜひ参考にしてください。
これは俄然、旨味たっぷり！和風きのこパスタの気分になってきた！
バターなし！きのこの和風パスタの材料（2人前）
| 材料 | 分量 |
| パスタ | 200g |
| オリーブオイル | 大さじ1.5 |
| ニンニク | 2片 |
| しめじ | 1袋 |
| えのき | 1袋 |
| シイタケ | 4枚 |
| ○酒 | 大さじ1 |
| ○みりん | 大さじ1 |
| ○醤油 | 大さじ1.5 |
| 〇和風だし | 小さじ1 |
バターなし！きのこの和風パスタの作り方
- にんにくをみじん切りにして、オリーブオイルで炒めて香りを出す。
- キノコ類を食べやすい大きさに切り、①に加えて炒める。
- 火が通ったら調味料○を加える。
- パスタを茹でる。途中でゆで汁を③に1杯加える。
- パスタを③に加えて馴染ませる。水気を見てゆで汁を1杯程度加える。
- 盛り付けて完成。お好みで海苔、大葉、カイワレなどを添えてください。
バターのコク深さの代わりにオリーブオイルとにんにくを入れいますが、しっかりを旨味を増幅する役目をしてくれています。
醤油の香ばしさと相まって非常に完成度の高い和風パスタです。
今回はカイワレを添えましたが、海苔や大葉などの薬味は必須なくらい高相性です。旨い。
【アレンジ】大根の葉と油揚げの和風パスタのレシピ&作り方
和風きのこパスタもシンプルなレシピとしてご紹介しましたが、捨ててしまいがちな大根の葉と賞味期限が短い油揚げを使った余りものアレンジレシピを紹介します。
大根の葉は意外にも癖が無く、触感も楽しい優秀な葉物です。
油揚げは煮詰めるのではなく、ごま油と塩でパリパリに仕上げて触感と塩味のアクセントとして使います。
これが非常に美味しいので、大根の葉と油揚げが冷蔵庫にあったら是非試してみて下さい。
（なお、大根の葉の一番おいしい食べ方は間違いなく天ぷらです）
| 材料 | 分量 |
| パスタ | 200g |
| オリーブオイル | 大さじ1.5 |
| ニンニク | 2片 |
| 大根の葉 | 80g |
| 油揚げ | 1枚 |
| 大葉 | 4枚 |
| ○酒 | 大さじ1 |
| ○みりん | 大さじ1 |
| ○醤油 | 大さじ1.5 |
| 〇和風だし | 小さじ1 |
- 油揚げを油抜きして、5mm幅に切り揃える。
- フライパンにごま油 大さじ1/2(分量外)を敷き、1の水分をギューッと絞ってから炒める。
- ２の水分が抜けてパリパリになってきたら塩を一つまみ(分量外)まぶして、別皿に移す。
- にんにくをみじん切りにして、オリーブオイルで炒めて香りを出す。
- 大根の葉を適当に細かく切り、4に加えて炒める。
- 火が通ったら調味料○を加える。
- パスタを茹でる。途中でゆで汁を③に1杯加える。
- パスタを③に加えて馴染ませる。水気を見てゆで汁を1杯程度加える。
- 仕上がったらパスタを盛り、上から3の油揚げ、細く切った大葉を添えて完成。
大根の葉の爽やかさと触感が出汁を効かせた和風パスタに非常に合います
そしてパリパリにした油揚げのアクセントが非常に楽しい一品となっています。
