頭まで活用！漬け、茹で、揚げで3度美味しい甘えびのレシピ

甘エビの漬け

甘えびは非常に人気が高く美味しいですが、お刺身で食べる機会がほとんどではないでしょうか。

また、多いやや値段が高い割に可食部が少ないので、あまり自宅で調理する機会は少ない方も多いかと思います。

今回はお刺身以外のレシピ3選をご紹介します。殻も全て有効活用したレシピをご紹介しますので、少し値段が高いと感じている方もお手頃に感じるかもしれません。

レシピ1.　甘味と旨さが凝縮！甘えびの漬け

甘エビの漬け

甘えびをお刺身ではなく、少し醤油とワサビに漬け込むことで臭みも抜け、トロっとして旨味が凝縮した味になります。

ご飯に乗せて食べると非常に贅沢なご飯のおかずになります！

甘味と旨さが凝縮！甘えびの漬け材料

材料 分量
甘えび(むき身) 20匹分
醤油 大さじ2
ワサビ 適量
カイワレ大根 適量

甘味と旨さが凝縮！甘えびの漬け作り方

  1. 甘エビの殻を剥き、塩水で軽くすすいでおく。

    殻は後ほどのレシピで全部使用しますので、捨てないでください！

  2. 醤油にワサビをとかし、甘えびを10分程度漬ける。

    漬けすぎはしょっぱくなりますので、余った分は別の器に移して下さい。

  3. 皿に移して、カイワレ大根を添えて完成。

レシピ2.　コク深いスープがたまらない！甘えびの味噌汁

甘エビの味噌汁

甘エビの頭と殻は茹でることで非常に香りが良い出汁が出ます。

出汁が良く出たスープに味噌を溶かして味噌汁にすることで非常に美味しい味噌汁になります。

材料 分量
甘えびの殻 20匹分
水 600cc
酒 大さじ2
カツオ出汁 小さじ1/4
味噌 大さじ1

  1. 殻を軽く洗って、水と酒で30分程度茹でてダシを取る。

    水は状況を見て足してください。最終的に400cc位が目安です。

  2. 飾り用に頭2つは味噌汁用に残して、他の頭と殻は取り出しておく。

    他の頭と殻はから揚げにします！

  3. 味噌とカツオ出汁を溶かし、器に盛ってネギを散らして完成。

レシピ3.　カリカリの触感が美味しい！甘えびの頭のから揚げ

甘エビのから揚げ

出汁を取り終わった甘えびの頭と殻は出汁が出尽くしてそうですが、まだまだ旨味成分が強く残っており、少し乾燥させてからから揚げにすることで非常に美味しくいただけます。

出汁を取らずにから揚げにした時と引けを取らないくらい十分に美味しいですので、是非味噌汁も楽しみつつ、から揚げも作ってみて下さい！

材料 分量
甘えびの殻(味噌汁のダシ殻) 20匹分
片栗粉 大さじ2程度
塩 適量

カリカリの触感が美味しい！甘えびの頭のから揚げの作り方

  1. 殻は味噌汁から取り出し、乾燥させる。
  2. ある程度乾燥したら、塩を2,3つまみ振りかけて下味をつける。
  3. ビニール袋に片栗粉と一緒に入れて振って、満遍なく片栗粉を塗す。
  4. 180°の油でカラッと揚げて完成。

まとめ

甘えびは少し高くて、贅沢な食べ物という印象もありますが、美味しい味噌汁、そしてから揚げまで作れることも考えるとコスパも悪くない食材です。

出汁を取った後の乾燥に少し時間を要しますので、冷蔵庫で乾燥させつつ、翌日にから揚げにするのも良いかと思います。
