五目中華あんかけ2

中華料理代表として外すことが出来ないのが”あんかけ”。片栗粉を塗して焼き色を付けた豚肉は中華あんを纏うことでトロっとジューシーな味わいに。触感を残したキャベツとコリコリのきくらげを熱々の餡と一緒に頬張ると何とも言えぬ重厚感と満足感がある。

俄然、五目中華あんかけの気分になってきた！

トロっとした豚肉が絶品！五目中華あんかけのレシピ　2人前

 

材料 分量
豚小間肉 80g
青梗菜 1/2房
キャベツ 2,3枚
もやし 1/3袋
人参 1/2本
たまねぎ 1/4個
きくらげ 4個
○しょうゆ 小さじ1
○酒 大さじ1
◎しょうゆ 大さじ1
◎酒 大さじ1
◎中華だし 小さじ2
◎オイスターソース 大さじ1
◎水 200cc
◎しょうが チューブ5cm分程
ニンニク 2片
片栗粉 大さじ2程

①豚小間肉を○に15分つけ、下味をつけておく。

②野菜類ときくらげあ一口サイズに切っておく。にんにくはみじん切りにしておく。

③①の水気を切り、片栗粉(分量外)をしっかり塗しておく。

④◎を器に混ぜておく。

⑤フライパンに刻みニンニクを油大さじ1で熱し、香りを絶たせる。

⑥③をほぐしながらフライパンに加える。くっつきやすいので、手間でも十分にほぐして広げるようにフライパンに並べて焼く。豚肉は火が通ったら別皿に取り出す。

⑦大さじ1の油で、野菜類を全て加えて炒める。

⑧油が馴染んでしんなりしてきたら④加えて5分程煮詰める。

⑨水溶き片栗粉を徐々に加えてとろみを出す。

⑩⑥の豚肉を加えて全体をなじませて完成。
