中華料理の定番レバニラ炒め。このレバに使用するレバーは豚と鳥が一般的であり、中華料理屋では豚レバーの方がよく使用される。
レバーの臭みが苦手な方や臭み抜きする時間が限られる方などは鶏レバーを使用すると良い。
豚レバーはレバー独特の風味が良くも悪くも強く、食べたときの触感も「これこれ」と思わせてくれるレバーの触感をしている。
しっかり臭み抜きした美味しい豚ニラレバのレシピを紹介する。
豚レバーで激ウマ！ニラレバ炒めのレシピ 2人前
| 材料 | 分量 |
| 豚レバー | 300g |
| 牛乳 | 200cc位 |
| ニラ | 1袋 |
| もやし | 1袋 |
| ◎醤油 | 大さじ1.5 |
| ◎酒 | 大さじ1 |
| ◎みりん | 大さじ１ |
| ◎中華だし | 小さじ1 |
| ◎オイスターソース | 大さじ1 |
| 〇醤油 | 小さじ1 |
| 〇酒 | 小さじ1 |
| 〇生姜 | 3cm程度 |
| 〇にんにく | 1片 |
豚レバーで激ウマ！ニラレバ炒めの作り方
①豚レバーを食べやすい大きさにカットして、水のよく洗ったあと水に浸しておく。2回程濁ってきたら水を交換する。
時間が無い時は30分くらい牛乳に浸してください。
②水気を切り、牛乳を漬かるくらい入れて一晩冷蔵庫で寝かせる。
③牛乳をよく洗い流し、調味料〇で15分程下味をつける。
④水気を切り、片栗粉を塗して多めの油で揚げ焼きにする。別の皿に移しておく。
くっつきやすいので、揚げ焼きするときは一つずつはがしてフライパンに並べて焼いてください。しっかり焼いて大き目のレバーで火の通りを確認して下さい。
⑤ニラは3,4cm幅程度に切っておく。
⑥調味料◎は合わせておく。
⑦多めの油でもやしから炒め、少し火が通ったらニラを加えて油を回す。
⑧揚げ焼きにしたレバーを加える。
⑨⑥で合わせておいた調味料◎を加えて強火でざっと炒めて完成。
カリっと揚げ焼きした衣にタレがしっかり絡んで旨い。豚レバーの独特の風味もニンニクのパンチを相まって非常に強い旨味になっている。
ニラともやしはざっと火を通すことでシャキシャキとした触感を残すとレバーとのコントラストがついて旨い。
