至福のボロネーゼソースのレシピの材料(2人前)

| ひき肉(合挽) | 200g |
| 玉ねぎ | 1/2個 |
| 人参 | 1/2個 |
| セロリ | 1/2本 |
| 赤ワイン | 200cc |
| トマト缶 | 1個 |
| ナス | 1本 |
| オリーブオイル | 大匙2 |
| にんにく | 2片 |
至福のボロネーゼソースの調理
具材を細かく刻む
野菜はみじん切りで出来る限り細かく刻む。細かい程、煮込んだ際に牛肉やソースとの一体感が生まれ、完成度が高くなる。食べた人の喜ぶ顔を想像しながら無心で包丁をトントントン。
野菜を炒めるいわゆるソフリット作り。オリーブオイル大匙2をフライパンに敷き、玉ねぎから炒める、最初は強火でも良いが、透明になってきたら弱火でじっくり約15分炒める。多少の焦げは許容されるが、焦げすぎるとボロネーゼの深い旨味に苦味、雑味が含まれてしまう。玉ねぎが茶色になってきたら、人参、セロリを加えさらにしんなりするまで炒める。じっくりじっくり根菜の旨味を引き出してあげるように、おいしくなーれおいしくなーれと唱えながら木べらでペタペタ。
肉を炒める
中火でオリーブオイル大匙1を加え、にんにくを加える。やや香りが立ってきた程度で強火に切り替えてひき肉を投入。にんにくの香りがついた油をまとわせるに軽くほぐしたら放置。炒めるというより、“焼く”。ひき肉にやや焦げ目がつける感じが香ばしさが出て良い。
赤ワインとトマト缶で煮込む
ひき肉に香ばしい焼き色が付き、概ね火が通ったら赤ワイン200ccを加えて煮込む。アルコール飛ばして旨味を残す作業。加えて肉の臭みも取り除いてくれる。
5分程煮込んだら、トマト缶と塩一つまみを加え、煮込む。ひたすら煮込む。
最初は味見しても、まとまりの無い味に感じるが、煮込み始めて30分程度から一体感と強い旨味が感じられるようになる。
仕上げ
肉、ソフリット、ワインの旨味が十分に一体化し、旨味が引き出されたら、塩コショウと塩味の調整と、粉チーズで最後のコクを加える。この辺りは自分が旨い！と思える程度でどうぞ。
実食
出来上がった品がこちら。
旨い。食べる前から旨い。今回はベースのボロネーゼソースに、別で油多めでじっくり炒めたとろとろのナスを加えた。
重厚感漂うボロネーゼソースと見るからにモチモチとした手作り生パスタ。それをジューシーなナスが彩っている。
一思いにかぶりつきたいが、まずは嫁に食べてもらう。
