イカと茄子のパスタ2

自宅でつくるトマトソースパスタは味気なくなることが多いですが、オリーブオイルとニンニク、玉ねぎをじっくり炒めたトマトソースはコク深く本格的な味わいにあります。

今回は絶品トマトソースにイカと茄子を加えたパスタを紹介します。

材料 分量
パスタ 180g
オリーブオイル 大さじ2
ニンニク 3個
トマト缶 1個
イカ 1杯
茄子 2本
ゆで汁 お玉1,2杯分
塩 少々

①にんにくをみじん切りにして、オリーブオイルを敷いたフライパンで炒めて香りをだす。

②みじん切りにした玉ねぎを加えてじっくり炒める(可能なら15分ほど)

③食べやすい大きさに切ったイカを加えてフライパンにトマト缶と、塩を二つまみ加え、煮込む。

④なすを食べやすい大きさに切り、別のフライパンに多めの油を敷いて焼き目をつけ、蓋をして弱火で蒸し焼きにする。

⑤パスタを表示時間通りにゆでる。途中でゆで汁をお玉1.2杯③に加える。

⑥茹で上がったパスタと茄子を加えて、馴染ませて完成。
