金沢駅ビル内にある回転寿司　すし玉さん。食べログ評価も非常に良いことはさることながら、駅ナカというアクセスの良さが出張帰りのサラリーマンには喜ばしい限りです。

すし玉

程よく熟成されてトロっとしつつ、新鮮な歯ごたえも感じられる真鯛は安定の美味しさを感じました。

丁度良い酸味と甘みのシャリともベストマッチで回転寿司としてはかなり高レベルな印象を受けました。

ハマチ

すし玉1

脂が乗っていますが、さらりと口当たりが良く上品な印象を受けました。シャリとの一体感も良く非常に美味な一皿でした。

珍しいエビがありましたので思わず注文してしまいました。大ぶりなエビは食べ応え十分でトロっとした身質と十分な甘味を感じることが出来ました。身質と甘さは赤海老に近いかもしれません。

エビの頭はから揚げで添えてくれました。こちらも非常に美味しいです。

あら汁

豪華なあら汁は鯛、ハマチ、サーモンのアラを使った品。尾の部分は身も多く味噌汁自体の味はもちろん身も楽しむことができます。

紋甲イカ

すし玉4

肉厚な身質は食べ応え十分です。もちもちとしつつ歯切れの良い身質をしています。

生げそ

生のゲソを出す寿司屋は珍しい気がします。こりこりしたゲソに生姜が良く合います。さっぱりした品が食べたいときにぴったりの一品です。

マンダイ能登塩炙り

すし玉6

マンダイも珍しいネタです。真鯛よりも脂が乗った身質で良くも悪くも脂の荒々しい味が炙りで見事に美味に昇格しています。塩で頂けるのもうれしいです。少し強い味が欲しいときに良い皿です。

まちこ巻

すし玉7

珍しいハマチの細巻きです。脂が乗った腹の部位を使用していますが、一緒に巻いてあるシソと良いハーモニーを奏でます。巻き具合も程よく口の中でほぐれる技ありの一品は、海苔自体の風味も一級で非常に完成度が高い皿です。

せんな巻(わざびの葉)

こちらも初めてのネタです。ワサビ巻ではなくワサビの葉の細巻きです。高菜に似た触感と風味がありますが、ちゃんとワサビの辛さがあります。スッと口の中をリセットしてくれますが、結構辛いので辛いのが得意な方におすすめします。

しめ鯖(浅〆)

すし玉9

浅めに〆たしめ鯖とのことで、こちらも珍しいネタ。通常の鯖よりクセがありますが、青物特有の風味旨味が強く残っており、生に近い鯖の寿司となっています。アジやイワシの寿司が好きな方にぴったりのネタです。これとは別に深〆のしめ鯖もございます。

甘えび昆布締め

すし玉10

こちらも珍しい甘えびの昆布締めです。昆布を敷いた上に甘えびを敷き詰めて再度昆布で覆ったものをスライスしたような品です。程よく身質が引き締まった甘えびが美味ですが、醤油をつけすぎると昆布の風味と引き立った甘味が損なわれる印象を受けました。臭みも程よく抜けているので少量の醤油か塩などで頂くことをおすすめします。

カサゴ

すし玉11

こちらも珍しいカサゴの握りです。根魚のカサゴは釣り人の特権のような魚で、漁ではあまり捕れないため仕入れ値は高くなります。身質はあっさりした白身で真鯛にも似ています。今回は熟成も浅いためか歯ごたえをしっかり感じる良質な白身という印象で、もう少し寝かせた身質も楽しみたいと思いました。臭みはほとんど感じず美味しく頂くことが出来ました。

生タコ

柔らかでトロっとした美味しいタコでした。生姜が乗っているのは珍しく、脂が乗ったノドクロの前後に食べると良さが引き立ちそうです。

煮穴子

すし玉13

ホロホロと箸でほぐれるまで煮込まれた穴子は柔らかで非常に美味でした。個体が大きいのか煮すぎなのか身質にややパサつきを感じましたが、穴子は無知故に理由までわからりませんでした。

タコのから揚げ

すし玉14

吸盤部分を使用したから揚げです。生ダコの吸盤をから揚げにしているのだと思いますが、弾力はもちろん、トロっとした身質も感じられる一品になっています。ビールなど頼む方は一緒に注文することをお勧めします。
