| 鶏もも肉 | 一枚 |
| 茄子 | 3本 |
| 小松菜 | 1/4袋 |
| 〇酒 | 大さじ1 |
| 〇塩コショウ | 適量 |
| 水溶き片栗粉 | 適量 |
| ●醤油 | 大さじ2 |
| ●酢 | 大さじ2 |
| ●酒 | 大さじ1 |
| ●砂糖 | 大さじ1 |
| ●みりん | 大さじ1 |
まるで黒酢あんかけ！鶏肉と茄子の南蛮酢炒めの作り方
①鶏もも肉は食べやすい大きさに切り、調味料○に15分漬けておく。
②フライパンに多めの油を敷き、①の鶏肉に片栗粉(分量外)を塗して揚げ焼きにする。別皿に分けておく。
③茄子は食べやすい大きさに切り、フライパンに大さじ1の油で焼き目をつけ、弱火で蓋をして蒸し焼きにする。
④食べやすい大きさに切った小松菜を加え、油が回るくらいにさっと炒める。
⑤調味料●を加え少し煮詰めてアルコールと飛ばす。
⑥水溶き片栗粉を⑤に加えトロみをつけ、②を加えて和えて出来上がり。
片栗粉を塗して揚げ焼きにした鶏肉がとってもジューシーで、甘酸っぱい餡がよく絡みます。
コク深いのにさっぱりしていて食欲がない時でもがっつり食べることができそう。じっくり火入れした茄子もトロりとした触感でうまい引き立て役になってます。
大葉をたっぷり添えて食べることで清涼感がさらに増して絶品です。本当に旨い。
