しっとりバンバンジー

しっとりジューシーな蒸し鶏は『本当に鶏むね肉？』と疑いたくなるような触感で、あっさりしつつジューシーさに驚くはずです。

蒸し鶏に合わせるゴマソースは味噌を隠し味に使用します。お酢と醤油ベースのあっさりソースにコクと深みが加わって俄然本格的で一段上の味わいに仕上がります。

定番の付け合わせであるきゅうりとも相性ばっちりですよ！

材料 分量
鶏むね肉 200g(1枚)
きゅうり 2/3本
生姜 3スライス
酒 大さじ2
ゴマソース調味料 分量
すりごま 大さじ2
砂糖 小さじ1
酢 小さじ1
醤油 小さじ4
味噌 小さじ2

  1. 鶏むね肉が収まるくらいの大きさの鍋に、生姜スライスと酒を加えて沸騰させる。
  2. 鶏むね肉を鍋に入れ再沸騰したら火を止めて蓋をする。お湯が冷めるまで4時間ほど放置。

    余熱でじっくり火を入れることで、しっとりジューシーに仕上がります！

  3. きゅうりを細切りにしておく。
  4. ゴマソースの調味料を全て混ぜておく。
  5. 茹で上がった蒸し鶏をスライスして、きゅうりを添えて、ゴマソースをかけて完成。

鶏むね肉は調理過程で急激に熱が入りタンパク質が凝固して硬くなること、脂肪成分が少ない事から硬くパサパサになりがちです。

沸騰したお湯に入れ、火を止めてじっくり火を通すことでゆっくり身質に火が通り水分も閉じ込めたまま、ジューシーな身質に仕上がります。

少し時間がかかりますが、お昼ご飯を作るついでにお湯を沸騰させて置いておく、夜にお湯を沸騰させて朝まで放置でも構いません。

また鶏むね肉をゆでたスープはいい出汁が出ていますので、中華ダシを加えてネギと溶き卵でスープなどはいかがでしょうか。
