サバの生姜漬け焼きのレシピ

サバの代表的な料理と言えば、サバの塩焼き、サバの味噌煮など数々御座いますが、少し小ぶりのサバの場合には脂分が少なく塩焼きなどはパサついて美味しくない時はございませんか？

小さめのサバは脂分が少ないので、可能な限り水分を逃がさないような調理法が向いています。

今回は小ぶりで脂の少ないサバも絶品に仕上がるレシピをご紹介します。
また、塩焼きや味噌煮に飽きたという方にも是非レパートリーに加えて頂きたいレシピとなっています。

脂が乗ったサバは塩焼きが一番ですが、それ以外のサバはこの食べ方が一番うまいです。

サバの生姜漬け焼きのレシピ

サバを生姜、醤油、酒にしっかり漬けこんで、片栗粉を塗して揚げ焼きにすると、噛んだ瞬間に水分がジュワっと飛び出し、生姜の香りを醤油の少し焦げた香りがたまらない一品になります。

しっかり衣のジューシーな触感がサバの脂の少なさを感じさせず絶妙にバランスが取れています。

大根おろしをたっぷり乗せていただくのも絶品です！

ざっくり衣が旨い！サバの生姜漬け焼きの材料

材料 分量
サバ 1匹分
〇醤油 大さじ1
〇酒 大さじ1
〇生姜 チューブ5cm程度
片栗粉 大さじ3
大根 10cm

ざっくり衣が旨い！サバの生姜漬け焼きの作り方

  1. サバを三枚おろしにして、血合骨も除去して骨が無い状態にしてから、食べやすい大きさにカットする。
  2. ビニール袋に調味料〇とカットしたサバを入れ、少し揉みこんで30分程寝かせる。
  3. この間に大根は大根おろしにしておく。
  4. 2の袋から余分な水分を捨て、全体に片栗粉をしっかりまぶす。
  5. 多めの油を引いたフライパンで全体がバリっとするまでしっかり揚げ焼きにする。
  6. 大根おろしを添えて完成。

生姜は国産のすりおろしが香りが強くで美味しいです。

サバの臭みがあるので生姜は思ってるより多めでもバランスが取れます。漬け置き時間は30分程度ですが、10分程でも美味しく仕上がります。

揚げ焼きの際には片面大さじ1ずつ油を使用してください。

サバの風味と生姜のさっぱり感、揚げ焼きによるジューシーさがとても良い具合になります。

脂が乗ったサバではなくても美味しく仕上がるのがこのレシピの良さです。
