中華料理の代表格チンジャオロース。
一般的なレシピでは牛肉を使用しますが、我が家では昔から豚肉を使用します。
肉自体の旨味は牛肉の方が強いですが、豚肉の脂の旨味をピーマンとたけのこに吸わせたチンジャオロースはこれで旨いです。何より安い。
豚肉でもしっかり旨い！豚肉で節約チンジャオロースのレシピ 2人前
| 材料 | 分量 |
| 豚こま肉 | 200g |
| たけのこ水煮 | 100g |
| ピーマン | 4個 |
| 〇オイスターソース | 大さじ1 |
| 〇酒 | 大さじ1 |
| 〇みりん | 大さじ1 |
| 〇醤油 | 大さじ1 |
| 〇砂糖 | 小さじ1 |
| 〇中華ダシ | 小さじ1/2 |
| 片栗粉 | 適量 |
豚肉でもしっかり旨い！豚肉で節約チンジャオロースの作り方
①豚肉は細切りにして、分量外の醤油小さじ2、酒大さじ1で下味をつけて10分程置いておく。
②ピーマン、たこのこは細切りにする。
③①の豚肉の水気を切り、片栗粉を塗して、多めの油を敷いたフライパンで炒める。別皿に移して油をきっておく。
④フライパンに少なめの油を敷いてピーマン、たけのこを炒める。ある程度火が通ったら③の豚肉を加える。
⑤調味料〇を加えて、トロっとしてきたら完成。
片栗粉で揚げ焼きにしたた豚肉のトロっとした触感とピーマン、たけのこのシャキシャキした触感が非常に旨い。これを食べていると牛肉のチンジャオロースより旨いんじゃないかと毎度思ってしまう。
