日本でも大人気な韓国料理の代表チャプチェは、それぞれの野菜を別で炒め、適切な火入れを行ってから最後に合わせる調理法ですが、工程が多くて本格的なレシピは作る気になれない方も多いかと思います。

一方で、全部一緒に炒めてしまうと韓国料理屋で食べるようなシャキシャキとした人参やニラの触感が失われて、韓国風野菜炒めのような触感になりがちです。

今回は本格的な野菜の触感を生かしながら、工程をシンプルにして簡単に本格的なチャプチェを楽しめるレシピ＆作り方をご紹介します！

野菜と春雨を一緒に炒めてしまうと、春雨に味が馴染む前に野菜類がしなっとしてしまいます。

野菜類と春雨は別で炒めることで、シャキシャキな野菜と味がしっかり染みた春雨を楽しむことが出来ます！

少し甘辛な春雨にごま油でしゃきしゃきに仕上げた野菜が絡んで、香りが良く触感も楽しい一品に仕上がります。

冷めても美味しいですのでお弁当にもいかがでしょうか。

材料 分量
春雨(乾燥) 80g
豚こま肉 100g
ニラ 1/2束
玉ねぎ 1/2個
にんじん 1/2本
調味料 分量
○醤油 大さじ3
○みりん 大さじ1
○酒 大さじ1
○砂糖 大さじ1
ごま油 大さじ1
塩 適量
いりごま 適量

  1. 春雨は茹でて戻しておく
  2. 豚こまと人参、玉ねぎも細切りにしておく、ニラは3,4センチ幅で切りそろえる。
  3. ごま油をフライパンに引き、豚肉を炒める。塩を2つまみ加える。
  4. 豚肉に火が通ったら、玉ねぎとにんじんを加えてしんなりするまで炒める。
  5. ニラは最後に軽く火を通す程度にして、全体に塩を2,3つまみ加えて、ボールに取り出す。

    春雨と別で火を通すことで触感が残り美味しいチャプチェになります。

  6. 春雨と調味料○をフライパンに入れ、水気がなくなるまで炒めて、⑤のボールに取り出す。
  7. 野菜類と春雨をボールで混ぜ合わせてさらに盛り付け、いりごまを振って完成。
