リンゴ酢の余った林檎は甘味が抜け、発行した独特のまろやかな酸味があります。

少し加熱して煮込むことで角がなく、まろやかさが強調された良い調味料になります。
酸味を追加したい、まろやかな甘味を追加したい時などにすりおろしてお酢の代わりに使用することが出来ます。

香辛料を効かせたスパイシーなカレーにまろやかさが加わり、奥行きのあるカレーに仕上がります。

材料 分量
カレールー 1/2箱
水 800cc
玉ねぎ 1個
リンゴ酢の残り(すりおろし) 大さじ5
にんにく 3片
鶏むね肉 1枚
ほうれん草 1袋
クミンシード 小さじ1/2

  1. 鶏むね肉はあらかじめたっぷりのお湯でゆでて、蒸し鶏を作っておく。
  2. ほうれん草は下茹でして、冷水で締めて、3,4cm幅に切りそろえておく。
  3. フライパンに油を敷き、みじん切りのにんにくを加えて弱火で炒めて香りを出す。
  4. 3にみじん切りの玉ねぎをに加えて10分程、じっくり炒める。
  5. 4にクミンシード加えて油と馴染ませるように軽く炒める。
  6. 5にすりおろしたリンゴを加えて酸っぱい香りが柔らかくなるまで炒める。
  7. 6に水を③に加えて1煮立ちさせる。
  8. 7にカレールーを加え全体が馴染んだら、裂いた蒸し鶏とほうれん草を加えて完成。

リンゴ酢の余った林檎は加熱することで、角が取れてまろやかな味わいになりますので、たくさん使って消費していただけます。

また、玉ねぎは少し茶色になるまでじっくり炒めることで奥行きのある深い味わいになりますので、10分程度は炒めてあげてください。

スパイスは手に入りやすいクミンシードだけを材料として使っています。もちろん市販のカレールーだけでも美味しく作れますが、クミンシードを加えるだけであっという間に本格的なスパイスカレーの風味が出ますし、リンゴ酢の余った林檎のまろやかな酸味、甘味とも相性がバッチリです！
