グレ、別名メジナ。脂の乗ったグレは煮つけに限る。見た目とは裏腹な繊細でほろほろとほぐれる身質は上品で、脂のとろっとした感じも重厚感があって旨い。生姜を添えてすっきりさせればバランスが取れた極上な煮つけになる。

これは俄然、グレの煮つけの気分になってきた!

脂でとろっとろ!簡単失敗無し!グレの煮つけのレシピ 2人前

材料 分量
グレ 1匹
醤油 大さじ3
砂糖 大さじ3
大さじ3
みりん 大さじ3
大さじ5(切り身なら大さじ3)
生姜 6スライス程

①グレは三枚おろしの状態でも、1匹丸ごとでも可。煮込み時間と水の量を調整する。

②生姜3スライスは千切りにして水にさらしておく

③生姜3スライスと醤油、砂糖、酒、みりん、水を鍋で火にかけ1煮立ちさせる。

④グレを入れ、アルミホイルで落とし蓋をして、切り身は4分、1匹丸ごとは12分程弱めの中火で煮込む。

⑤千切り生姜を添えて出来上がり。

脂の乗ったグレの身がとろっと口の中でほぐれて旨い。甘めのタレを絡ませたら白ご飯が止まらない。
千切り生姜も一緒に頬張れば、すっきりさも加わり絶妙なバランスに。旨い。
