麻婆茄子と言えば、甜面醤の甘辛いコクを想像するが、甜面醤が家にある家庭があまりないと思う。

簡単調味料で簡単本格麻婆茄子のレシピの材料

材料 分量
茄子 3本
豚ひき肉 130g
長ネギ 10cm
○味噌 大さじ1
○オイスターソース 大さじ1
○醤油 小さじ1
○中華だし 小さじ1
○酒 大さじ1
○水 100cc
○酢 小さじ1/2
○にんにく 2片
水溶き片栗粉 適量

①大さじ2程度の油をフライパンに敷いて茄子を中火で炒める。焼き色がついたら弱火で蓋をしてしんなりするまで蒸し焼きにする(3分程度)。別皿に取り出しておく。

多めの油でじっくり火を通すと、とろっとして極上に仕上がります！

②茄子を炒めている間に、長ネギとにんにくをみじん切りにしておく

③○を全て合わせてタレを作る

④脂大さじ1をフライパンに引いて、にんにくを入れ弱火で火にかける

⑤香りが立ってきたらひき肉を加えてる。あまり混ぜずに焼き色をつけると香ばしく仕上がる

⑥①の茄子と③の合わせ調味料タレを加えてアルコールを飛ばすように少し煮込む

⑦みじん切りのネギを加え全体になじませたら、水溶き片栗粉を加えてとろみをつけて完成

とろっとした茄子にコク深いタレが絡んで絶品。オイスターソースと味噌が良い具合に甜面醤のような甘さとコクを演出している。ネギも火を通し過ぎずに触感がしっかり残っておりさっぱりとした印象を与えている。

ご飯にもお酒にもばっちりな一品に仕上がった。旨い。
